While sweater weather is upon us it is also time for some fall foods too. Many associate fall with sports, tailgating, beer and more. While tailgating is not really an option these days it does not mean you cannot tailgate in your own backyard. Start a fire, light up the grill and get your cutest hat to wear, maybe supporting one of those sports teams people love.

We broke out some roasted garlic smoked sausages from Kiolbassa Smoked Meats in Texas to throw on the grill. The side searing burner on the grill gave us some nice char on the links before they were finished off on the regular grill. I served mine up on a brioche roll with a sweet and dark German mustard (it is October), diced onion and some jalapeno slices.


But I do have to say the sausage chili Tim made with the smoked beef sausage from Kiolbassa was amazing! I know you all want a recipe so here we go:

1 package of Kiolbassa Beef Smoked Sausages - slice sausage into 1/2 in rounds

1 Tbsp vegetable oil

1 cup chopped onions

1 Tbsp minced garlic

1 bottle (or can) dark beer

1 envelope of chili spices

1 (28 oz) can of whole tomatoes crushed with their juices

2-3 cans of your favorite beans for chili (Pro tip - rinse your canned beans for less chance of offending others later)

3 Tbsp tomato paste

In large pot heat oil over medium/high heat heat oil. Toss in sausage and brown on all sides. Add onion, garlic and chili spices. Cook, stirring frequently until soft. Deglaze the pan with beer and cook until the foam is gone.

Add in tomatoes, paste, and beans. stir and bring to a boil. lower the heat to medium low then simmer for half an hour. Make sure you stir occasionally to avoid any burning at bottom of pot. Season with salt and pepper to taste.

Garnish with your fave chili toppings. I like cheddar, sour cream, green onions, and some hot sauce.
