How To Treat "Mature" Bananas Better

What do most people do with the bananas that did not get eaten in their prime? Banana bread… yawn.

We need to treat these older bananas with the respect and dignity they deserve. They don’t deserve to be tossed into some quick bread, they should be elevated.

So may I present to you: CARAMELIZED BANANA BOURBON CREAM PIE

Now when one talks pie we must first discuss crust. Pie crust can be a work of art and something that takes great craftmanship. Or you can be like me and get the frozen rolled pie crusts at Aldi. I don’t have time for all that. Plus 2 crust come in a box and only 1 is needed for this pie. so the next time you put black bananas in your freezer it will be next to this pie crust to remind you of their potential.

Learn from my mistakes:

1) Confirm you have the needed ingredients before you begin cooking

2) There is no substitute for heavy cream

3) When running to the store for 1 item don’t give AF how you look (but please wear a face mask)

Caramelized Banana Bourbon Cream Pie

1 Frozen rolled pie crust

4 “Mature” Bananas

1/2 cup sugar

1/4 cup cornstarch

1/4 tsp. salt

2 cups milk

3 large egg yolks

3 Tbsp. butter

3 tsp. Bourbon

1 cup heavy cream

2 Tbsp. powdered sugar

For Garnish (optional): 1 perfectly ripe banana, cinnamon, strawberries

Prepare the pie crust per package recommendations for a custard style pie and cool.

In a double boiler add the following dry ingredients: sugar, cornstarch, and salt together. The slowly add the milk, mix well and cook over a rapid boil. Keep stirring, cutie, for another 10 minutes after all the milk is added.

Slightly beat the separated egg yolks then add a small amount of the milk mixture and stir in. Then add to the rest of the milk (still over the double boiler and stir for another minute.

Remove from heat and add in 1 Tbsp. butter and 1 tsp. bourbon then let the filling thoroughly cool.

Prepare the mature bananas by peeling and do your best to slice them even though they are pretty mushy. Add the rest of the butter to a sate pan over medium heat. Once the butter is melted add the bananas to the pan and cook to get some caramelization and much more of a brown color. This may become even mushier but not to worry we are going for flavor here…(I may have also added a splash of bourbon in here to).

Cover the bottom of the pie shell with a layer of the cooled filling. Then layer your cooked bananas and top with the remaining filling.

Whip up the heavy cream until you have stiff peeks then add in the powdered sugar and remaining bourbon. Spread this over the top of your pie. Garnish with sliced perfectly ripe banana slices and cinnamon or strawberries if you so choose.
